Crumb-Coated Cod Fillets


Pantry ingredients and fresh or frozen fish make this tasty entree a snap.

SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 30 Minutes

Ingredients

4 Cod Fillets (4 oz. each)
1/4 cup flour
1/4 tsp. pepper
1/8 tsp. salt
2 eggs
1 tsp. water
1 cup bread crumbs
1/4 cup shredded Parmesan cheese
4.5 tsp. Ranch Salad Dressing Mix

Directions

	Step 1: In a shallow bowl, combine flour, pepper and salt.

	Step 2: In another shallow bowl, whisk eggs and water.

	Step 3: In a third bowl, combine the bread crumbs, cheese and dressing mix.

	Step 4: Coat fillets with flour mixture. Dip in egg mixture and coat with crumb mixture.

	Step 5: Place fillets on a greased baking sheet. Bake at 425 degrees until internal temperature reaches 145 degrees.
